Chicken Salad

Ingredients

  • ½ apple sliced thin
  • ½ red onion thin julienne
  • 8 oz. sugar snap peas ends removed
  • 1 cucumber oblique cut
  • ¼ cup sliced scallions
  • 2 grapefruits suprim cut
  • 10 baby potatoes cut into thirds
  • ¼ cup feta cheese
  • 4 grilled chicken breasts
  • Greek yogurt

Instructions

  • Smear a circle of greek yogurt on a plate.
  • Toss apple, red onion, sugar snap peas, cucumber, and baby potatoes with vinaigrette. Plate on top of greek yogurt. Top salad with grapefruit, feta cheese, and scallions. Serve with grilled chicken.

Notes

The ingredients in this salad are roughly measured. I encourage you to adjust based on personal preference.
The greek yogurt on the plate is what really makes this salad special. As you eat the vinaigrette mixes with the greek yogurt, getting creamier and creamier, and the dish you finish eating is not the one you began eating.
